    Kashi GoLEAN cereal, 1 1/4 cups
    Wheat flour, white, all-purpose, 3/4 cup
    Whole wheat flour, 3/4 tsp
    Baking Powder, 1 1/2 tsp
    Baking Soda, 1 1/2 tsp
    Salt, 1/2 tsp
    Cinnamon, ground, 1 tsp
    Nutmeg, ground, 1/4 tsp
    Ginger, ground 1/4 tsp
    Milk, nonfat, 2/3 cup
    Egg, fresh, 2 large
    Brown Sugar, .1/4 cup, packed
    Vegetable Oil, 1/4 cup
    Natural Apple Sauce, 1/8 cup
    Carrots, grated, 3/4 cup
    Cranberries, dried, sweetened, 1/2 cup


Pre-heat oven to 375 degrees. Combine cereal, flour, baking soda, baking powder, salt, cinnamon and nutmeg. In a seperate bowl, mix the milk, sugar, applesauce, eggs and vegetable oil. Stir in the craisins and grated carrots. Mix the dry and wet ingredients until moistened. Using an ice cream scoop, divide into muffin tins. Let sit for 5 minutes before baking. Bake 15-18 minutes and let cool on a wire rack.
