I am a personal chef for a couple who try to stay away from gluten and refined sugar. I created this recipe to give them a tasty treat in the place of those old fashioned ones. ENJOY! Ingredients

    4 Tbsp. Unsalted Butter
    ¼ cup xylitol sweetener
    1 tsp molasses
    1 tsp vanilla
    1 egg
    ½ cup total mixed flours (rice- brown & white, potato starch)
    ¼ tsp salt
    ¼ tsp baking soda
    ¼ tsp xantham gum
    ¼ tsp cinnamon
    Dash of nutmeg
    ¾ cups oats
    ½ cup raisins
    ½ cup walnuts

Directions


1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
2. Cream together the butter and the xylitol.
3. Add in molasses, vanilla, and egg and beat until combined.
4. Sift together the dry ingredients and add by hand to the wet ingredients, and then stir in the oats, raisins, and walnuts.
5. Drop heaping teaspoonfuls onto the cookie sheet. Bake for 16-20 minutes. Cool on a wire rack and enjoy.

Yield: 15 cookies
