Ingredients

    16 oz beef, ground or in strips
    1 small or 1/2 medium onion
    1/2 cup dry long grain brown rice
    3/4 cup beef broth
    1 can red beans or kidney beans (drained and rinsed)
    1 can diced stewed tomatoes
    1 green pepper, diced

    cumin, chili powder, and garlic to taste

Directions

Brown beef with onion and seasonings
Add dry rice and saute quickly
Add broth, beans, tomatoes, and green pepper.

Bring to a simmer and turn to low; cook til rice is fully cooked and sauce thickens up, about 1 hour.
