Ingredients

    1/4 c. mashed banana
    4 egg whites
    1/3 c. canola oil
    1/2 c. unsweetened apple juice concentrate
    1 T plus 1 t. water
    2 C. whole wheat flour
    3/4 t. cinnamon
    2 t. baking soda

    1/3 c. chopped walnuts can be added but that would raise the calories

Directions

1. Preheat oven to 350. Prepare 18 standard-sized muffin cups with paper liners.
2. IN a large bowl, stir together banana, eggs, oil, apple juice concentrate, and water. Add flour, and cinnamon; miz well for 1 to 2 minutes. Stir in baking soda quickly, and then mix about 30 beats. Spoon batter into cups.
3. Bake about 18 minutes, or until a toothe pick comes out clean. As soon as they are done, remove muffins from the tins and cool on a wire rack.
