    2 cups mashed squash
    2 eggs
    1 cup butter melted
    beat together with wisk
    stir in:
    1 cup sugar
    5 teaspoons baking powder
    1 teaspoon salt
    mix well and add 3 cups flour
    spray muffin pan

    bake at 400 18-20 min Makes 12 muffins

    Used only about 1/2 the butter and 1/2 whole-wheat flour. This is one muffin recipe that needs to be well-stirred. I portioned it into 12 jumbo paper muffin liners and cooked 20 minutes. The tastiest squash muffin recipe I have ever made, bar none! Thanks for sharing! - 5/1/11
