Ingredients

    1 Pork Tenderloin (1 lb)

    1/2 teaspoon celery salt - divided

    1/2 teaspoon garlic powder- divided

    1/2 teaspoon pepper - divided

    4 slices provolone cheese

    2 cups fresh spinach

    2 thin slices of deli ham

Directions

Butterfly tenderloin by slicing down middle but not all the way through. do the same on each side being carefull to not cut all teh way through. With a meat malet flatten the loin until it is about 1/4 thick

sprinkle with half the celery salt, garlic powder, and pepper.

place provolone cheese on, then spinach making sure to press down, followed by ham. Roll jelly roll style and tie with cooking string

Place on a rack and sprinkle with remaining seasonings. Bake in the oven 425 for about 25 minutes (160 with a meat thermometer) Let stand of 10 minutes slice and serve
