Quick and easy grilled panini topped with zucchini, tomatoes, mushrooms, poppy seeds and Parmesan cheese - I like this as a get up and going breakfast. Ingredients

    1/2 Panini - I like to use the olive flavored ones
    1/2 Tomato sliced
    1/4 Baby Zucchini sliced
    2.5g Parmesan Cheese
    1/2 medium sized Mushroom sliced
    1/4 Chili / Hot pepper sliced
    1/4 tsp Poppy Seeds
    1 tbsp Tomato Sauce

Directions

1. Half your panini of choice length ways and spread the tomato sauce to cover.
2. Place the chopped vegetables in layers to cover (like a pizza) and sprinkle with the poppy seeds and a little salt and pepper.
3. Grate the parmesan cheese on top and bake for approx. 10-15 mins in a 170 - 180 degree Celsius oven (grill for the last couple of minutes if you like it a bit crunchy).
