Introduction

Ingredients

    1 medium cabbage - boiled
    1 lb turkey sausage
    2 tomatoes - diced
    2 stalks celery - chopped
    5 medium mushrooms - sliced
    1 small onion - diced
    3 cloves garlic - chopped
    1 small container part-skim ricotta cheese
    1 cup shredded part-skim mozzarella cheese
    1 egg
    1 can Hunt's Spaghetti sauce (Garlic & Herb)
    Italian seasoning to taste

Directions

Boil cabbage and set aside to cool.
In large saute pan crumble & cook turkey sausage.
When sausage is nearly cooked add vegetables and saute until sausage is cooked and vegetables are tender.
Add Italian seasoning and spaghetti sauce to sausage & vegetables. Let simmer for 10 mins.
Mix ricotta cheese, egg and Italian seasoning in small bowl and set aside.
In 9"x13" baking pan place 1 layer of cabbage leaves. Layer with 1/2 of sauce/meat/vegetable mixture and then 1/2 of the ricotta mixture. Sprinkle on 1/2 cup of mozzarella cheese. Place another layer of cabbage, sauce and cheeses.
Cover with tin foil and bake at 350 degrees for 30 minutes.
Remove foil and bake for an additional 15-20 minutes until cheese is browned.

    This was really delicious.
    I added zucchini, spinach, carrots and green peppers. I also used ground chicken.

    This recipie takes a while to assemble so it's a good one to make on a day when you have a lot of time. It is a wonderful way to use up a cabbage from the garden and it is chock full of vegetables. It really fills you up. I had two pieces because the calories a low enough. - 7/29/07
