Introduction

A slightly spicy, very tomato-y dish made into a main course with the addition of chicken and just enough smoked sausage for flavoring (4 oz for 4 servings). Very tasty served hot with cheddar melted on top. Ingredients

    1 c. dry brown rice
    1 can petite diced tomatoes
    1 can plain tomato sauce (about 1 cup)
    1 c. diced onion
    4 cloves garlic, minced
    0.5-0.75 lb (8-12 oz) diced raw chicken breast
    4 oz finely diced kielbasa or other smoked sausage
    1 T chili powder
    2 c. water
    1 tsp chicken bouillon
    1 can black beans, rinsed and drained

Directions

Heat a skillet. Fry the kielbasa until the fat starts to come out. Add onion and raw chicken and cook until onion is translucent and chicken is no longer pink. Add garlic and cook until fragrant.

Add remaining ingredients except black beans. Bring to a boil, reduce heat, and cook covered until rice is tender. Check and add water if necessary. After rice is cooked, add beans and heat through.

Serve hot with a little sharp cheddar sprinkled on top.
