Introduction
This has always been my Family's favorite - and requested still for family get together's years later. This makes a family size soup pot. Add water to make 8 - 2 cup servings. Can easily be modified using healthier soups, this is all I had. You can also add more or less milk or water to make your soup thinner or creamier to your liking. Adding a baguette or roll and salad makes a great meal with this soup. This has always been my Family's favorite - and requested still for family get together's years later. Ingredients
-
2 heads of broccoli, cut your way stem & head
10 baby carrots, sliced
1 can cream of celery soup
1 can cheddar cheese soup
1 cup 100% milk
water
pepper to taste
Directions
Clean and cut broccoli & carrots. Put in dutch oven size pot and just cover with water to boil. Bring to boil and lower heat to simmer just about 5 - 7 minutes. Don't over cook the broccoli. Add soups, milk, and water to desired thickness of soup. Raise heat just before the boiling point - cook in a simmer and stir often to fully blend flavors and cook through. This can be done in 45 min start to finish or you can make it ahead and let it sit for a while and blend the flavors well.
