Introduction
Tastes like cabbage rolls but without all the work! Really nice casserole for fall/winter. Served with a crisp green salad, this makes a good meal. Tastes like cabbage rolls but without all the work! Ingredients

1 large onion, chopped
1 green pepper, chopped [optional]
1 lb lean ground beef
1/2 cup rice
3 to 4 cups shredded cabbage [depends on your casserole size]
1 can tomato soup, undiluted
salt & pepper to taste
Directions
Saute onion & peppers [if using peppers] in a bit of oil; add and lightly brown the ground beef and drain off fat.
Add rice to meat. Season to taste. Stir in tomato soup and mix well.
Place shredded cabbage in casserole dish, enough to fill about 2/3 full. Top with the meat mixture.
Bake at 375 degrees for about an hour or till cabbage is cooked through.
