Introduction
I was trying to come up with a meal using what I had on hand and that my niece and nephew would eat. They loved it, plus it was easy to make only 3 ingredients and low on fat and calories. Ingredients
-
1 pound skinless chicken breast, cut in bit size pieces
2 cups of spaghetti sauce with mushrooms
1 17.6 oz package of Gnocchi
2 tbsp Parmasan cheese, grated
Directions
Preheat oven to 400 degrees
Cut chicken breast into bite size pieces (about 1" or bigger) and place in large baking dish. Pour the 2 cups of spaghetti sauce over the chicken. Place lid on the baking dish or cover with foil tightly. Bake in the oven for approximately 30 minutes at 400 degrees.
While chicken is baking, cook the Gnocchi. Bring a pot of salted water to a boil.( use pot large enough to hold about 8 cups of water). Add the Gnocchi to the water when it reached a full boil and cook for 2-3 minutes or until they start to float. Remove from heat and drain.
When chicken is fully baked, remove from oven and gentle mix in the Gnocchi, coating it with the spaghetti sauce.
Divide into 4 equal servings top each with 1/2 tbsp. of the Parmasan cheese and enjoy.

Very tasty recipe - my sauce did not have mushrooms , so I added fresh. I think I overcooked my Gnocchi, have to watch that better next time ! But a great recipe, made with things I usually have on hand. I think next time I will add the Spinach like another reviewer mentioned. Thanks for the recipe. - 2/5/16
