Ingredients

    8 lg. Shrimp or 4 slices of chicken
    1/2 medium onion (sliced)
    1 1/2 c. peppers (sliced)
    2 jalapeno peppers (diced)
    1/2 large tomato (large dices)
    1/2 tbs. extra virgin olive oil

    Marinade:
    1 tbs Olive oil
    1 tbs white vinegar
    2 tsp. chili powder
    2 tsp cumin pepper
    1 tsp. cheyenne pepper
    dash salt and pepper

    2 whole wheat tortillas
    1/2 c. (1 serving) of brown rice.

Directions

Prep and marinate shrimp/chicken for at least 30 minutes.

Prepare rice.

Heat tortillas.

Heat skilled with cooking spray. Add 1/2 tbs. olive oil. When hot add peppers and onions. Saute until caramelized. Add marinated shrimp/chicken. Add tomatoes.

serve hot, adding cheese and salsa.
