Ingredients

    3 cups zucchini
    4 cups yellow squash
    4 cups chopped onion
    1 3/4 c canned pinto beans
    1 3/4 cup canned kidney beans
    3 1/2 cups canned diced tomatoes
    3 cups frozen yellow corn
    1 cup tomato sauce
    16 oz 93%ground beef
    1-2 packet(s) Williams chili seasoning
    2 cups water
    2 tbsp olive oil

Directions

Brown ground beef and 1 cup chopped onions in skillet in olive oil. Set aside. Add remaining ingredients to large crock pot. Add beef mixture and stir til well blended. Set crock pot on low for 8-10 hours. Serve hot.
