Introduction
Super moist, big, pumpkin spice muffins. Super moist, big, pumpkin spice muffins.Number of Servings: 12
Ingredients
-
14.5 oz can of pumpkin
3 mashed bananas
1 box of spice cake mix
1 tsp sugar
1 Tbl pumpkin pie spice
1/3 c Bisquick
2 tsp sugar on top of muffins
Directions
Preheat oven to 350.
Pour the cake mix in to a big bowl.
Add the can of pumpkin, the bananas, the pumpkin pie spice, and 1 tsp of sugar.
Stir till there are no more lumps.
Add Bisquick and stir again. Batter should be thick, but it would still fall off a spoon.
Pour into a greased muffin tin. I like to use a tin with 12 regular-size cups. This will fill them all the way up and even a little more which makes for a big muffin top.
Sprinkle 2 tsp of sugar on top of the muffins.
Bake until a toothpick stuck in the center of one of the muffins comes out clean. My muffins took about 30 minutes, but you should start checking at about 20 minutes to make sure you don't burn them.
Remove from oven and let cool in pan for 5 minutes, then remove from pan and let cool on a rack for another 5 minutes.
Makes 12 very generous muffins.
