Introduction

Ingredients

    Approximately 4 slices Cooked Ham
    2 tablespoons Salsa
    2 servings Egg Substitute
    1/4 Cup Reduced Fat Mozzarella Cheese
    Parkay, Spray Margarine

Directions

Chop ham into small pieces or strips.

Prep skillet with Parkay, Spray Margarine. Add Cooked ham and salsa to the skillet and cook until warm add egg substitute and cook until eggs are almost done then add cheese and cook until cheese is melted and eggs are done.

This can make one or two servings depending on how hungry you are.

Serve with toast and orange juice.

    Really tasty! I think I might like it better with less ham because I'm used to a low sodium diet, but it was very good and simple to fix! Thanks for sharing this recipe. :) - 11/29/08
