Introduction

Number of Servings: 6

Ingredients

    12 ounces of salmon
    2 eggs
    2 tbsp onions
    2 tbsp green bell peppers
    2 ounces cheddar cheese, shredded
    Salt and pepper to taste
    Old Bay Poultry Seasonning

Directions

Preheat oven to 350 F.

Mix all ingredients together and divide amongst 6 well-greased muffin cups. Bake at 350 for 30 minutes until puffed, set and slightly brown around the edges.

I also made mayonnaise dipping sauces (calories not included in this reicpe):
*Garlic, chipotle-lime seasoning, salt and pepper in mayonnaise.
*Dill weed, lemon zest and lemon juice in mayonnaise.

    Is this CANNED salmon? I have fesh, I think I could med dice it and put in recipe raw because of the 30 cook time. Any opinions? - 2/11/12

    Incredible!
    We just loved these! I did add a dash of cayenne and some lemon juice to spice it up a bit. We ate them without mayonnaise sauce and really enjoyed them. A keeper! - 4/14/11
