Introduction

Ingredients

1/4 cup quick cooking oatmeal
1 egg white
2 Tbsp Raisins chopped
1 Tsp mustard
1 Tbsp onion (minced)
1/4 tsp black pepper
1/2 tsp salt
1 lb lean ground pork
8 oz unsweetened applesauce
1/4 tsp cinnamon
Directions
1. Preheat oven 350
2. In medium bowl slightly beat egg white, stir in raisins, oats, onion, mustard, salt, pepper, & 1/4 cup applesauce
3. Add pork mix well
4. Shape mixture into a 6"x 6" loaf pan. Place loaf pan on a sheet pan.
5. Bake about 45 minutes or until internal temp is 155.
6. Let rest for about 20 minutes before turning out onto sheet pan and slice into 6 pieces
7. In a small saucepan combine remaining applesauce & cinnamon and heat (do NOT boil).
Top each serving with heated applesauce.
Note: carb count is a little off, couldn't find number of carbs in raisins.
I used apple pie spice instead of cinnamon
I made homemade applesauce and used a little Stevia instead of sugar as well as apple pie spice. Came out delicious!
