white flour - c. 100 grams
Directions
1 serving, but it's easier to work the dough if you make two or more servings.
Usually servings are calclulated as 1 egg + 100 g flour per person
Make a "volcano" with the flour, with the egg in the crater. Begin beating the egg with a fork, without touching the flour - the flour will be slowly picked up by the egg and be incorporated into the mixture.
When the dough gets dry enough abandon the fork and knead by hand. If it starts to get too dry don't add all the flour; if too wet add more flour. It should be the consistency of smooth play-do.
Roll out with a rolling pin or a hand-crank machine (by far the best way) and then cut the dough into fettucccine, which means "little ribbons". See picture for best way to cut.
