This is a quick microwave recipe that makes a yummy snack! It could also be pureed but may need a tablespoon or two of hot water added.

While eveyone else is having a high-fat, high-sugar dessert at Thanksgiving, make this yummy alternative in a jiffy for yourself! But, watchout! Everyone else may want one, too!

Ingredients

    1 - Medium Size (2-3/4" diameter) Baking Apple (i.e., Cortland, Rome, Jonathan, Golden Delicious, Granny Smith, Pink Lady, Honeycrisp, Ida Red, Winesap)

    1 Tablespoon Apple Cider or Juice

    1 ounce KASHI™ Apple Orchard™ Granola

    1 teaspoon SMART BALANCE® Buttery Spread


Directions

1. Spray an 8-inch ramekin with butter-flavored cooking spray.
2. Core apple, peel and slice. Place in ramekin. (I use a hand apple slicer and leave the slices chunky.)
3. Add 1 Tablespoon of apple cider or juice to ramekin.
4. Sprinkle KASHI™ Apple Orchard™ Granola over apple slices.
5. Dot top with SMART BALANCE® Buttery Spread.

Cover loosely and microwave on high for 1 minute. Let sit in microwave for 2 minutes. Carefully remove ramekin from microwave, if necessary, and gently stir ingredients (will be very hot). Replace ramekin in microwave and heat on high for 1 minute more. Let sit for 5 minutes. Serve warm.

    OMG SO GOOD I used I can't believe it's not butter and a splash more Apple Cider than they call for but it's SOOO good - 1/8/10

    Very Good
    VERY GOOD! As a Roux-en-Y Bariatric, I'm extremely careful about sugars and fat. I made a few changes. I used Bare Naked Fruit 'n' Nut Granola (fewer calories and less sugar/fat), I Can't Believe It's Not Butter and a tiny bit more cider. Microwaved it in two ramekins to make two servings. - 4/21/13
