Ingredients

Cream of Celery Soup, 1 can (10.75 oz), prepared
Breakstone's Fat Free Cottage Cheese, 1 cup
Baked Potato, with skin, 5 medium (2-1/4" to 3-1/4" dia.)
Chicken Breast, no skin, 8 ounces
Onions, raw, 1 medium (2-1/2" dia)
Green Chiles, 4 serving (remove) (abt a cup)
Cheddar Cheese, .66 cup, shredded
Directions
**Preheat oven to 350* F.
1. Poke holes in the potatoes with a fork or knife and cook in microwave for about 8 minutes. (makes the process go a lot faster.
2. While potatoes are cooking, cook chicken if not pre-cooked. I cut mine up into pieces about dice sized to mix better with the potatoes.
3. Chop up the onion. You can cook it with the potatoes or just put it in the casserole for a more onion-y taste.
4. In a 9x13" pan/pyrex dish put cottage cheese, can of celery soup (without water), green chiles, and onion (if keeping them raw) and mix it all together.
5. When potatoes are done in microwave dice them up and put them in the pan as well as the chicken once it's cooked. Mix it all together so it's pretty evenly spread.
6. Sprinkle the cheese on top.
7. Put in oven for about 20-30 minutes to melt the cheese and heat it all up.
8. Eat up and enjoy!
