Ingredients

    1/2 lb. venison tenderloin-cut into bite sized pieces
    6 Tbs marinade
    1 C dry quinoa-rinsed thoroughly
    2 C beef broth
    1 green pepper- cut into strips
    1 onion-cut into strips
    1 C sliced mushrooms
    1 Tbs olive oil-divided
    1 Tbs Creole seasoning
    **I use low-fat broth and skimp on the olive oil



Directions

Servings--4
Cut venison tenderloin into bite-sized pieces and marinate 2-4 hours
Rinse quinoa thoroughly.
Combine with beef broth and simmer 20 minutes in covered pan.
Heat 1/2 olive oil in large skillet and stir-fry the venison. Remove.
Heat the rest of olive oil and stir-fry the green peppers, onions and mushrooms.
Add the creole seasoning
Combine with the meat.
Serve over the quinoa.
