Introduction

This one saves about 300 calories from fast food burritos that you drive through and pick up. I make up extra and wrapp in plastice wrap individually and store in the freezer. I grab one and take it to work to warm up in the microwave for a filling warm breakfast. Lots of protein keeps me full longer! Save even more calories by using La Tortilla Factory Whole Wheat Fat Fee tortillas (but they are more than twice the price). Ingredients

    1, 12 oz roll of Jimmy Dean Reduced Fat pork sausage
    1 cup fat free shredded mild cheddar cheese
    6 large eggs
    8 whole wheat 98% fat free tortillas (taco size)
    Peppers and/or chopped onions or spices to your taste.

Directions

Makes 8 servings.

Break up and brown the sausage in a pan. Add any additions after the sausage is browned. When completely browned and cooked through, add the eggs and scramble. Warm tortillas for about 30 seconds in your microwave. Divide out between the tortillas filling each down the middle. Divide and sprinkle the cheese over the top. Roll up and eat or wrap individually and freeze for later.

    This recipe is good and it's easy. I also cut back a little on the sausage. A great make ahead, grab and go breakfast. I used egg beaters instead of eggs. - 8/2/09

    Very Good
    We make this a lot at our house. I don't care much for sausage so we only use a quarter of a roll. Very yummy. However a burrito like this at mcdonalds is 300 calories total. You save about 25 and the temptation of the hashbrowns! 8) - 12/16/08

    Their burritos are tiny in comparison to these and they cost a lot more. Glad you liked it though. You can substitute whatever meat you want also but you have to change the calorie counts.
