Ingredients

    1 15oz. can kidney beans
    1 15oz. can canellini beans
    1 15oz. can garbanzo beans
    1 28 oz cans crushed plum tomatoes
    2 cups thinly sliced onions
    1 cup escarole
    1 small diced jalepeno
    3 Tbsp. chopped parsley
    1 Tbsp. lime juice
    1/2 tsp. ground pepper
    1/4 tsp. sea salt
    1 lb. 99% lean ground turkey

Directions

Makes 12 servings

Drain and rinse beans.
Combine with all ingredients EXCEPT turkey in the crock pot until well combined.
Separate turkey over stew and then combine again.
Cover and heat on high for 4 hours or low for 8.

    Like the "spice" addition of the jalapeno and DH and I like just about anything with tomatoes. Will try this recipe soon. - 1/27/11
