Introduction

Number of Servings: 28

Ingredients

    3 cups flour
    2.5 cups packed brown sugar
    2 tsp baking soda
    1 tsp salt
    2/3 c lite coconut milk
    1/2 vegetable oil (or substitute apple sauce)
    2 cups pureed pumpkin
    Season to taste w/
    cinnamon, nutmeg, cloves, and ginger

Directions

Combine dry ingredients in large bowl. Add wet ingredients and mix.

Preheat Oven to 350

You can do this in 2 loaf pans - 1hr and 10 minutes

or in muffin tins - 25 minutes

Makes approximately 2 loaves or 28 muffins
