Introduction
I got this from a Taste of Home magazine and used Wholewheat bread and reduced the butter and sugar. My husband loves it. You make it ahead of time and let the bread soak up the milk mixture. It's heavenly with some sausage (not in the nutritional info). I used 15 slices of bread so 1 serving is 1 1/2 slices of bread. Ingredients

- 1/2 c packed light brown sugar
-1/4 c unsalted butter, cubed
- 2 T water
-1 can unsweetened sliced (29oz) drained peaches
-about 15 slices (3/4") whole wheat french day old bread
-1 1/2 c skim fat free milk
-5 eggs
-1T vanilla extract
Directions
Slice your bread first and make sure you have enough to cover the distance of your 9x2x13 casserole dish. Set aside but cover so it doesn't get dry.
In a small saucepan, bring to a boil your butter, water and brown sugar. Then lower to simmer for 10 minutes and stir frequently. Then pour this mix in the bottom or your casserole dish and turn the dish so all of the bottom is covered.
Now layer the drained peaches and top with your bread.
In a large bowl wisk your milk, vanilla and eggs and SLOWLY pour over your bread so it soaks into each piece of bread. Cover and refridgerate for 8hrs to overnight. REMOVE FROM THE FRIDGE 1/2 HOUR BEFORE COOKING, and sprinkle with cinnamon then bake for 20 minutes at 350 degrees covered. Uncover and bake another 25-30 minutes or until bread is golden brown. Serve with a spoon.
Makes 7.5 servings if you use 15 slices of bread and eat 1.5 pieces of bread with the yummy peach filling underneath.
