Introduction

slimmed down version that tastes just as good as the original slimmed down version that tastes just as good as the original
Number of Servings: 2

Ingredients

    cooking spray (like Pam)
    1 tsp butter
    1 large egg
    1/2 cup egg substitute
    3 T water
    1 oz (1/4 cup) diced lean ham
    2 T chopped onion
    2 T chopped green pepper
    1/4 cup fat free cheddar cheese (Kraft)
    herbs - to taste
    black pepper - to taste

Directions

Chop onion, green pepper, and ham.
Spray non-stick pan with cooking spray. Add 1 tsp butter and pre-heat pan while creating egg mixture.
Egg mixture - beat together egg, egg substitute, water, black pepper, and choice of herbs ( I use herbs de provence).
Saute onion and green pepper for 2 min, add ham and stir. Pour egg mixture into pan and cover. Check after 2 minutes and gently push sides toward center of pan so liquid will fill edges. Cover and let cook until done.
Remove from heat and spread cheddar cheese over cooked egg. Fold over, let sit for 1 minute, then cut in half and serve.
