Ingredients

    10 large eggs
    1.5 cup light mayo
    .66 cup canola oil
    tsp cayenne
    tsp white pepper
    tbsp salt
    20 cups ( 4LBS) frozen cauliflower, broccoli, and carrots
    1 cup minced onion
    1 cup minced celery

Directions

preheat at 425F. Bake for 30 mins. lower temp to 350F and bake for another 60 mins or until firm in center and slightly crispy and golden .do not defrost the veggies as this will decrease the cooking time and liquid content.

    sounds good. I want to try this out, but do you just mix all ingredients together and pour into baking dish? What about the bread crumbs???? - 12/14/08

    The bread crumbs are mixed right in. They lend a smoother texture, while still keeping it parve.It 's not particularlly dietetic, but at least you will know now how many calories are in a serving. I hope you like it.
