Introduction

This is a flavorful soup that is great when it is cold outside. A lot less fat than traditional potato soups. This is a flavorful soup that is great when it is cold outside. A lot less fat than traditional potato soups.
Number of Servings: 9

Ingredients

    2.5lbs potatoes, (skin on) chopped
    2 stalks celery ,chopped
    1/2 large onion, chopped
    4 cups frozen broccoli florets
    1 oz butter or margarine
    2 cups skim milk
    1tsp salt
    pepper to taste
    **2 cups of water reserved from boiling potatoes**

Directions

In a large pot add potatoes, celery, and onions cover with water. Bring to a boil & cook for about 20 min or until all tender. Add broccoli in when there is about 5 minutes left in cooking time. Drain the water reserving 2 cups for soup.
In a large food processor blend 1/2 potato mixture with 1/2 cup of reserved water. Repeat with remainder. You could also use hand masher for this if you do not have a food processor.
Add potato/broccoli mixture back into pot, add remainder of water, and last 4 ingredients. Stir well.
Serve with shredded cheese & bacon bits.
Makes about 9-1 cups servings.

    Very Good
    Made as written - quite an earthy tasting soup, deep, soothing flavour which I really enjoyed. Will definitely make again. Goes beautifully with nutty/wholemeal bread.
