Ingredients

    1.5 lbs (3-4 pieces) B/S Chicken Breast
    Coated in Egg & Italian Style Bread Crumbs
    Fried in EVOO
    Spices

Directions

Butterfly or tenderize your chicken. Scramble the eggs with a little bit of milke maybe a Tblsp. Coat it with the Bread Crumb/spice mixture (I like to use garlic and onion powder, oregano, italian seasoning and parmesean)and Fry it in the EVOO. When you are done frying it, you put it on a paper towel covered plate (Viva works best) and let some of the EVOO drip off. It is delicious with mashed potatoes or you can make chicken parmasean by putting the cooked pieces into a 9X13 pan and covering them with your favorite sauce and a little cheese. That gets served with spaghetti! They are both delicious and easy.
