Introduction

Delicious and sweet with chunks of pineapple! The pineapple sort of takes the place of the egg and makes this almost taste like cake. Delicious and sweet with chunks of pineapple! The pineapple sort of takes the place of the egg and makes this almost taste like cake.

Ingredients

1 box of Jiffy Cornbread Mix
    ½ small can of Pineapple
    1 large Egg (I use Eggland's Best <3)

Directions

Preheat the oven to 400 degrees. Mix everything together in a big ol' bowl! Pour it into a cake pan or some such and stick 'er in the oven! Woohoo! Wait, then eat! Delish.

(Basically follow the directions on the back of the box and add pineapple - no milk.)

    Very Good
These were very good. Moist and just a touch of sweet. My DD really liked them. Very easy to make (I always have Jiffy and pineapple on hand). I only had the large pineapple, so I put them in the food processor before adding them. - 11/18/11
