Introduction
I made this soup because I was sick and needed something hot. I also remembered reading where cabbage soup is very filling. Because my daughters need to eat what I eat, I don't have time to make separate meals, and I knew that they would not go for just a cabbage soup I added chicken just to see how well it would go over with them. My daughters are very picky eaters and don't like a lot of different foods, however, they loved this soup and have told me that the next time I make it, why not try it without the chicken. Ingredients
-
Cabbage - one large head, rinsed and chopped
Chicken breast w/o skin
Carrots - rinsed and chopped
Onion - chopped
Bell pepper - rinsed and chopped
Zucchini - rinsed and sliced
Potatoes - peeled and cut into fours
Celery - rinsed and chopped
Directions
I cook this soup in the crockpot. I put it in at night and let it cook on low for 5 1/2 hours. It serves approx. 20, depending on the size of your crockpot. You can size this recipe up or down depending on your needs. I use herbs to season it, but it really is just seasoning to your taste. My crockpot is is very deep so it holds a lot. We eat some and freeze the rest for another day.
