Nutritious, kid-friendly and a healthy way to satisfy a chocolate craving. They can look pretty sophisticated when rolled in different toppings- powdered sugar, grated coconut, cocoa...

Ingredients

    2 cups natural peanut butter
    2 cups confectioner's sugar
    1 cup crisp rice cereal
    1/2 cup cocoa powder
    2 tsp vanilla extract
    1/2 cup hot water

Directions

MIx all the dry ingredient together as well as you can with a large strong spoon. Add the hot water to the mixture, quickly moistening until the mixture comes together to form a ball. With a measuring spoon scoop a tablespoon size amount of the mixture and roll briefly into a ball. Toss 1/3 of balls in a different topping of choice, for example -confectioner's sugar, grated coconut , sprinkles... and arrange on a serving platter. Store at room temperature.

    This recipe is a mess! To help, I added 1/2 C more confectioners and 1/2 C more cereal and then chilled the mixture before trying to roll it again. This did okay but it's still not at all what was expected, tastes good though ... - 4/19/15
