Introduction

This is based on changes I made to another SP recipe, trying to lower the sugar and calories. At 83 calories each they aren't quite low calorie but I think they're pretty wholesome for a cookie. Using vegetable oil instead of butter cuts a few calories and isn't as expensive as using Smart Balance. This is based on changes I made to another SP recipe, trying to lower the sugar and calories. Ingredients

    * Whole Wheat Flour, 2/3 cup
    * Baking Soda, 1 tsp
    * Salt, 1/4 tsp
    * Egg, fresh, 1 large
    * Granulated Sugar, 1/2 cup
    * Sucralose (like Splenda), 1/4 cup
    * Soybean Oil, 1/3 cup
    * Vanilla Extract, 1/2 tsp
    * Instant, Quick, and Regular Oats Cereal, 1.5 cups, dry
    * Cocoa, dry powder, unsweetened, 2 tbsp

Directions

Mix wet ingredients, then mix in dry ingredients. 1 cookie = 1 fairly flat tablespoon. Bake (on sprayed cookie sheet) for about 15 minutes at 350. My oven is weird so your mileage may vary- look for the tops to lose their stickyness; the cookies may seem soft at first but they will firm up a bit after cooling. Makes 21, about 85 calories per cookie.
