Ingredients

    1 egg plant, 2 zucchini, 1 onion, 2 red peppers, 2 cans crushed or diced tomatoes, 2 tbsp olive oil, 2 tsp garlic minced

Directions

saute garlic and onions in oil till softened. Add Eggplant, stir till coated with oil. cook 5 min. Add peppers and zucchini, stir till coated with oil. cook 10 min, add in tomatoes simmer till softened.
