Number of Servings: 60


    Corn grits, yellow, dry, 1 cup
    Milk, 2%, 2 cup
    Water, 1 cup
    Peanut Butter, smooth style, 4 tbsp
    *Whole Wheat Flour, 1.25 cup
    Baking Powder, 2 tsp
    Baking Soda, 2 tsp
    Vanilla Extract, 1 tbsp
    Cinnamon, ground, 1 tsp
    *Splenda No Calorie Sweetener, 10 tsp
    *Peanut (or Almond) Oil, 0.5 cup


In a medium to large saucepan bring corn grits and milk to a boil, reduce heat, add peanut butter, vanilla extract, cinnamon and sweetener.
Simmer for about 20 minutes, stirring often and adding water after approx. 5-10 minutes (you want a creamy, but still thick consistency). Remove from heat
Preheat oven to 325 F.
In a separate bowl combine flour, baking powder, baking soda and peanut oil.
Whisk in corn grit mixture.
Drop by the spoonful onto cookie sheets.
Bake for approx. 22 minutes.
Cool on wire rack and enjoy!!
