Introduction

These are great for Christmas or for those that like the flavor of Red Velvet cake, but not all the calories. These are great for Christmas or for those that like the flavor of Red Velvet cake, but not all the calories.
Number of Servings: 48

Ingredients

    1 box of Duncan Hines Red Velvet cake mix
    2 large eggs
    1/2 cup unsweetened applesauce.

Directions

Mix all the ingredients together.
Make small balls and bake at 350 degrees for 12 minutes on a greased cookie sheet or one lined with bakers paper.
Making 4 doz small cookies makes them only 49 calories
Making 3 doz larger cookies makes them 66 calories each.
Note: you could also add cream cheese frosting, but that adds calories you need to figure in.
Also, if you use 1/2 c oil instead of the applesauce 4 doz cookies will be 68 cal/cookie

    My daughter takes a class called "health and nutrition"...she had to make a low fat cookie recipe for her class. She wanted to make something "different, easy and yummy"! I found this recipe.
