Ingredients

    1 red cabbage, small
    2 tbsp extra virgin olive oil
    3 tbsp sherry vinegar
    salt and pepper to taste

Directions

Preheat oven to 450 degrees. Cut cabbage into wedges (8-12). Remove core then pull wedges apart. Toss together with oil and salt/pepper if using. Spread out on rimmed baking sheet, cover tightly with foil, and bake for 20 minutes or until it is crisp but tender. Remove foil then continue to cook for an additional 20-25 minutes, tossing occasionally. Sprinkle with vinegar and let stand for a couple minutes before serving.

    Incredible!
    Excellent - would've never thought to roast this veggie, but why not? I simplified cooking. Just through shredded cabbage in with my onions alongside my roast beef - 40 min or so. Delish! - 4/19/13

    This recipe was very tasty, although I didn't have sherry vinegar and used balsamic vinegar instead. Awesome flavor though, and my kids liked it because it was so "pretty"! Thanks for sharing!! - 2/1/11
