Ingredients

1 3/4 cup Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp Salt
3 tsp. Ground Cinnamon
1 tsp. Ground Nutmeg
1 1/2 cup Splenda Sugar-Free Brown Sugar Blend
1 cup Shortening (Crisco, butter or margarine)
2 Large Eggs
1/2 cup Sour Cream (optional)
1 cup Applesauce
1 tsp. Vanilla
1 cup Raisins
3 1/2 cups Quick Oats
Directions
Makes 48 cookies (approximately 1 1/2" in size)
Preheat oven to 375 degrees.
Sift together flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
Mix in Splenda Sugar-Free Brown Sugar blend.
Add in and cream all the above together with shortening.
Then add in eggs, sour cream, applesauce, vanilla, raisins.
Mix in Quick Oats until well blended.
Drop heaping teaspoons of cookie dough on ungreased cookie sheet.
Place in preheated oven @ 375 degrees for
10-12 minutes.
Make sure that cookies are soft and a little doughy looking when you take out of oven. This will avoid burning or over cooking.
Once cooled, put in zip lock plastic bag or covered container and refrigerate for a day or so; the longer it refrigerates the moister the cookie.
