Introduction

Ingredients

    2 2/3 C. sugar
    2/3 C. light corn syrup
    1/2 C. water
    2 large egg whites
    1 tsp. vanilla extract
    1 C. chopped pecans

Directions

Put sugar, corn syrup and water in pan. On low heat bring to a boil while stirring. Once it comes to a boil, quit stirring and boil until it reaches soft crack (260F) on a candy thermometer. In the meantime, beat the egg whites until stiff. Slowly pour hot syrup into egg whites while beating. Beat until it begins to stiffen up and lose it's glossiness. Add the vanilla and pecans and beat until it reaches stiff peaks. Using a greased spoon, spoon out onto greased foil and let cool and dry. Store in airtight container.
Serving size is 1. Makes 38.
