Ingredients

12 saltine crackers
6 TBSN yellow Corn Meal
1/2 Cup Olive oil
2 large chicken beast or 3 small ones
1 cup canned mushrooms
1 large jar of Pimentos
1 cup celery
7 tsp minced garlic
3 cups rice dream rice milk
6 TBSN Flour (all-purpose)
1/2 cup red wine
Directions
Cut up chicken into 1-2" cubes.
Coat chicken in cracker/cornmeal mixture.
Brown coated chicken in oil.
Place chicken in a 13x9 pyrex pan. Place mushrooms, celery, pimentos, and garlic into remaining oil. If you have to add a TBSN more oil, do so at this time.
Cook items until soft. Add flour and seasonings (to taste).
Slowly stir in rice milk and red wine.
Simmer until it thickens.
Pour mixture over chicken and bake at 350 degrees for 1 hour.
Severe with some sort of dinner roll or bread.
