Low- fat comfort food for a crowd...couldn't find fat free cheddar cheese on the list, so this is far less fat than the calculator says. Makes a double batch that nearly fills a 6-quart crock pot liner. Serve one batch for family dinner, freeze the rest for later, or serve 12 now with leftovers! Any crisp veggie to add color and texture works great, whatever is in season! Ingredients

2 cups cooked chicken, cubed or fork-shredded
2 pounds dry whole wheat linguini
3 chopped stop 'n go bell peppers (on a budget, 3 green bells work fine)
1 can corn, drained
2 cans of condensed cream of chicken soup with 2 cans of skim milk to reconstitute (low-fat soup when I can find it)
half cup of parsley, basil, oregano blend
3 cups no-fat shredded sharp cheddar cheese
1T grated garlic
Directions
cook, cool, and cube or fork-shred 6 large chicken breasts
break dry pasta into small pieces, cook 7 minutes, drain (will complete cooking in casserole)
mix pasta, chicken, garlic, corn, soup and peppers in crock pot liner, blend in 2/3 of the cheese and seasonings
top remaining cheese and bake 40 - 45 minutes in 350 degree oven
