Ingredients

    2 Tablespoons Butter
    2/3 boneless skinless chicken breasts
    1 teaspoon salt
    1/4 teaspoon black pepper
    5 1/2 cups chicken stock
    1 Tablespoon Olive oil
    1/2 cup chopped onion
    1 1/2 cup Arborio rice
    1/2 cup dry white wine
    1 cup parmesian cheese
    2 Tablespoons parsley
    1/2 cup Heavy cream

Directions

Bring stock to simmer in seperate pan for later use

Heat butter over medium heat

Add chicken 1/4 teaspoon of salt and all the pepper Cook until just done and remove from pan

Add olive oil over low heat add onion and cook stirring until translucent

Add rice stir until opaque

Add the wine and remaining salt cook until absorbed

Add 1/2 cup stock at a time until aabsorbed maintain heat tso the pot is bubbling gently

Continue adding 1/2 a cup at a time until stock is absorbed Continue cooking until rice is tender around 25-35 minutes.


Stir in chicken, parmesian cheese and parsley.

Heat through and Serve with additional parmesian cheese for on top.

Makes 7 1 cup servings

    I've made this twice. The first time I added the cream at the end...there was a really weird texture. This time I added the cream after the last of the broth was absorbed, so it simmered into the rice as well. Same great taste without the odd texture. - 8/20/09

    Incredible!
    I realized I didn't have Parmesan cheese, so I used part skim Mozzarella. It was delicious! We all enjoyed it. The only problem I encountered making this (and it was a small one) is that the instructions don't tell you what to do with the heavy cream. I added it at the end. Could add veggies. - 4/2/09

    yes the veggies are a great addition i personally like it best with peas and or carrots added
