Introduction

I wanted to improve on O'Charley's Potato Soup. I think my soup tastes so much better than theirs. I wanted to improve on O'Charley's Potato Soup. I think my soup tastes so much better than theirs.
Number of Servings: 6

Ingredients

    2 cups diced potatoes
    1 medium chopped Vidalia onion
    3 cups water
    1 cup nonfat dry milk
    5 tbs. bacon pieces
    1 cup shredded cheddar cheese
    1/2 cup sour cream
    5 tbs. french fried onions
    1/2 cup instant potato flakes for thickener

Directions

Boil potatoes and onions in water about 30 minutes. Mash potatoes a little, leave a few chunks in it. Add 1 cup nonfat dry milk. Add instant potatoes to thicken the soup. Add the bacon pieces, cheddar cheese, and sour cream. Mix well till cheese is melted. Serve in a soup bowl. Sprinkle french fried onions on top. Makes 6 (3/4 cup)servings.
