Toasted Tuna Tomato Cheese Sandwich Toasted Tuna Tomato Cheese SandwichNumber of Servings: 1
Ingredients

Rye Bread (2 slices)
1/2 Plum or Roma Tomato, sliced thinly
1/2 tsp mayonnaise
1.5 oz mozzarella cheese, sliced thinly
dash of black pepper
Directions
Turn on oven or toaster oven to broil.
Spread thin layer of mayonnaise on each slice of rye bread, and place the slices mayo side up on a cookie sheet or oven proof pan.
(The mayo keeps the tuna from soaking the bread.)
Place the well-drained tuna on one slice of the rye; layer half of the mozzarella over the tuna; layer the rest of the mozzarella cheese on the other slice of rye.
Place beneath the oven broiler or in the toaster oven for 2-3 minutes, depending on the distance from the element, or until cheese is melted. Watch carefully to avoid burning the cheese. Remove pan from oven.
Place the thinly sliced tomatoes over the cheese & tuna side, add the dash of black pepper, and then turn the other slice of rye with cheese on top to make the sandwich.
Serve immediately.
This sandwich is warm and filling as a light meal along with carrot or celery sticks, or with a hot cup of tomato soup!
