Introduction

This is considered a heart healthy recipe that I found. My father has always preferred potatoes to rice and he enjoyed this recipe as well. Any time I cooked this it's always been a hit in the house. Ingredients

    2 cups cut-up chicken breast
    2 cups chicken broth
    2 Tbl flour
    2 Tbl butter or margarine
    2 Tbl diced onion
    2 4oz cans sliced mushrooms or 8 oz of sliced fresh mushrooms
    1 bag frozen brocoli or 4 cups fresh brocoli
    shredded cheese (if desired)
    cooked rice or potatoes (your choice)

Directions

Cook cut-up chicken breast in fry pan til lightly cooked or use 2 cups left over cooked chicken or turkey.
In sauce pan, over low heat - melt butter and fresh mushrooms and diced onion. Add flour to create paste. Slowly blend in chicken broth to create sauce. ( If using canned mushrooms do not drain add to sauce and simmer til thickens.)
Put thawed frozen brocoli or fresh cutup brocoli in 9 X 12 baking pan. Add cooked chicken. Pour sauce over brocoli and chicken. Sprinkle shredded cheese over and bake at 325 for about 30 minutes. Serve over cooked rice or with cooked potatoes.

Will serve 6-8 depending on portion size.
