Introduction

This is a quick and easy recipe, made with cake mix and lemon lime soda. You can use diet soda and brown sugar style Splenda to lower the calories even further, but I didn't have them on hand. Ingredients

    Cake, yellow, dry mix, light, 1 package
    Lemon-lime soda, no caffeine, 1 can
    Banana, fresh, 3 small
    Brown Sugar, .5 cup, unpacked
    Walnuts, .5 cup, chopped

Directions

Preheat oven to 375 degrees. Mash bananas in a large mixing bowl, add cake mix, can of soda and 1/2 the walnuts, mix well. Spoon 1/4 cup each into lined muffin tins. Mix the brown suger and the rest of the walnuts, spoon a small amount onto the top of each muffin. Cooked muffins are very moist, they are best if left uncovered after baking, otherwise they get very sticky.

Bake for 25-30 minutes. Makes 24 muffins. Serving size = 1/4 cup batter - one muffin
