Introduction

A good substitute when you are craving some scampi...you can serve over whole wheat pasta or brown rice. A good substitute when you are craving some scampi...you can serve over whole wheat pasta or brown rice.

Ingredients

    6 chicken breasts

    2 tbsp. EVOO

    2 tbsp. butter

    1 cup of chopped onion

    6 garlic cloves minced

    1/2 cup parsley ( I like Italian) chopped

Directions

Cut chicken breasts into bite size pieces and season with salt and pepper and sautee with oil, butter, chopped onion. and chopped garlic....when chicken is done...pour lemon juice over the top and microplane the skin of one of the lemons and sautee for about another 3 minutes. Top with the parsley and serve over whole wheat pasta or brown rice...or use it to top a bed of fresh greens for a kick butt salad :-)
