    1.5 cup whole wheat flour
    1.5 cup of oatmeal
    3 tsp of Baking Powder
    1 tsp of nutmeg
    1 tsp of Baking soda
    1 tsp of cinnnamon
    2 eggs - large
    4 mashed bananas (small)
    1 cup skim milk
    1/4 cup of honey
    1 small container of unsweetned apple sauce
    2 tsp of vanilla
    1 cup of raisins (soaked in hot water and drained - optional and not included in nutritional value of recipe).


Combine oats with milk and set aside. In a large bowl, mix the flour, baking powder, baking soda, cinnamon and nutmeg. To soaked mixture, add the apple sauce, honey, eggs, vanilla and bananas. Add wet mixture to dry mixture and stir only until moistened. (optional to add 1 cup of raisins that have been soaked in hot water and drained). Bake at 375 for 20 minutes if oven is convection Bake at 350 for 16 minutes.
Makes 24 muffins.

    A very good muffin I would make again. I substituted 1/3 cup pecans for the raisins. This added 1.1g of fat per muffin but really added to the flavor. My husband likes muffins a little sweeter so I might try adding Spenda next time. Thanks SANDI631! - 3/14/09

  • I made these today. The taste isn't quite what I was hoping for, however, they are good. I may make these again on occasion, I'll just want to cut the recipe back to make 12 instead of 24. - 9/7/12
