Refreshing and colorful vegan salad. Great for use as a thai side item or just for an interesting salad.

Ingredients

    1 cup julienned peeled jicama
    1 cup baby spinach leaves
    1 c thinly sliced red onion
    2 large Navel oranges, peeled and cut crosswise
    1 T jalapeno pepper (or more)
    1/2 c chopped fresh cilantro leaves

    1/3 c olive oil
    1/3 c orange juice
    1/4 c sherry vinegar
    1/2 t ground cumin
    1/2 t ground coriander
    Hot sauce to taste
    Pepper to taste

Directions

1. Stir oil, OJ, vinegar, 1/4 c cilantro, cumin, coriander, hot sauce, and pepper in small bowl
2. Combine onion, jicama, other cilantro, jalapeno, and spinach in large bowl.
3. Layer orange slices and salad on individual serving plates and drizzle dressing on top. (Note: for lower fat and calories use only 1/4-1/2 dressing).
